Whip eggs to blend. Sift flour, measure it, sift again with salt. Add flour and salt to eggs in four additions, blend till smooth. Add milk in two additions and beat in butter or oil. Butter bottom and sides of 9 - 10" heavy frypan. Pour in batter. Bake in oven at 450~ for 10 to 15 minutes. Cake will climb walls of apn. Slip onto plate, add filling and serve.
Filling: Melt butter in fry pan. Add apples. Sprinkle sugar and cinnamon. Cook over low heat until glazed and tender. Spoon into center of cake.
