Mash the bananas and sugar together. In a separate bowl mix the flour, baking powder and baking soda. Add the banana mixture, the optional raisins, and vanilla, stirring until thoroughly blended. Pour into non-stick loaf pan and bake at 350F (180 °C) for 1 hour. Remove from pan while still warm, and allow to cool before slicing. Makes approximately 8 servings.
