Put nonfat yogurt that has no gelatin or thickeners added into a yogurt strainer. Refrigerate and allow yogurt to drain until yogurt is reduced by approx. Half, about 24 hours. For a firmer, thicker result, drain yogurt in the refrigerator for 3 days. Transfer the yogurt cheese to a covered container and store in the refrigerator. The whey (that drains from the yogurt) may be used in any recipe calling for milk.
