Combine the first eight ingredients and toss lightly with a fork. Place steaks together and sew edges with cord, leaving an opening. Fill with stuffing, sew edges together. Sprinkle with salt and pepper. Coat with flour. Brown on both sides in a small amount of fat. Add 1/2 cup of water, cover and bake 2 hours or until tender. Recipe may be halved and just put stuffing over one steak and bake, or roll and tie.

My wife just hates livers and kidneys and hearts and stuff. I love the stuff, and some of the fresh sausage from there tasted so good, but very rich.
