Cream sugar, butter and honey. Combine flour, cardamon, soda and salt in a bowl, stirring to mix thoroughly. Add the flour mixture to the sugar mixture 1/3 part at a time. Add hot water after 2nd flour addition. Stir in nuts if desired. Bake at 350 degrees for 12 to 15 minutes. This is a thin cookie; don't overbake, it is not supposed to brown. They are chewy the first day and then become crisp.
