Mix all ingredients except vegetables; put mixture into a greased 1 1/2 quart casserole. Bake at 375~F for 1 hour. Seal casserole cover in place e with freezer tape. Freeze. Pour vegetables over loaf and reheat in a 350~F oven until piping hot all the way to the center before serving, about 45 minutes. 6 servings. Note: Do not add vegetables if meat loaf is to be frozen; add vegetables before reheating.
