I don't know if vinegar has sodium, but heres a recipe that doesn't use added salt:
Put all in saucepan. Boil for 10 minutes. Pour over canned green beans, carrots, or beets (no salt), or over sliced cucumbers and onions. These will keep for a week in the fridge. You can put the pickling spices in a bag or strain the mixture after boiling so the spices don't get onto the final product. These are very good.
