The beauty of this dessert is its simplicity. With a large spoon, scoop out the red portions of melon from the watermelon Slice into bite-size pieces and remove all seeds. Take 1 cup of juice remaining in melon and strain. In a large mixing bowl, add melon pieces, juice and mint flakes. Mix thoroughly. Cover and chill for at least 20 minutes and serve. Makes s 6 servings, yields 4 to 5 cups.
