Here is an excellent recipe for Hot Italian Green Peppers and Onions that I just made up myself from common sense I guess.
Place in a skillet all of the italian sausage links. Place the lid on top of the skillet and turn the temperature up to about 200-250 degrees and brown the sausage links. While the sausage links are browning clean and chop up the green bell peppers and place in a large container. Chop up the two onions and place in the same container with the peppers. After the sausage is completely browned place the chopped peppers and onions in the skillet and place the lid back on the skillet. Make sure that the vents for the lid, if there are any are closed, and turn the temperature to 200 degrees exactly. Keep watch on the mixture as the onions and peppers cook down and stir the onions and peppers as needed. When the onions and peppers are soft the dinner is ready. Place one or more of the sausage links on a hoagie bun and top with a generous helping of the cooked onions and peppers.
When this is cooked right it tastes just like the sausage with peppers and onions that one gets at a fair or carnival. Really good.
