8 x ca. 30 g | Linguine or Spaghetti |
1 x ca. 450 g | Raw Clams; chopped ** |
3 Esslöffel | olive oil |
1/4 Tasse | Clam Juice *** |
1/2 gross | Yellow Onion * |
1 Tasse | chicken broth low sodium |
6 | cloves garlic minced |
1/4 Tasse | parmesan grated |
2 Esslöffel | flour |
2 Esslöffel | Parsley minced |
* Finely Chopped ** Or use 1 (6-1/2oz) can minced clams, drained, rinsed well and drained again *** Or use low-sodium chicken broth Cook linguine according to package instructions, omitting the salt. Rinse with cold water, drain and set aside. Meanwhile, in a heavy 10" skillet, over moderate heat, heat olive oil 1 min; add onion and garlic and cook, uncovered, until onion is soft - about 5 mins. Blend in flour and cook, stirring constantly, 1 min. Add clams, clam juice and chicken broth and cook, stirring, 4 mins longer. Stir in cheese. Add cooked linguine and cook 1 min longer, tossing well, until heated through. Mix in parsley and serve.
