Heat pot of cooking oil to 325 degrees for deep-frying the hushpuppies. Peanut oil is the best. Try to maintain temp at 325 during cooking for best results.
Mix thoroughly the dry ingredients in a bowl (cornmeal, flour, salt, baking soda, baking powder, garlic powder and cayenne). You can sift the dry ingredients if desired.
Add in the green onions and corn and mix well.
Beat eggs and add to buttermilk and beat until well mixed. Add to bowl and mix well. If dough is too runny, add a bit more flour.
Just before cooking hushpuppies, add 2 tablespoons of hot oil from the deep fryer or pot and mix well.
Drop by spoonfuls into the hot oil and fry until done, turning to brown on both sides (they will quite often turn by themselves!).
