All the vegetable ingredients and the shrimp should be finely = chopped.
Start heating oil in medium heat. Toss in one clove of garlic. When oil is about 350°-375° it is ready for cooking. While you are = waiting for it to heat up start rolling lumpia.
Combine all ingredients (except 1 egg) thoroughly. Separate all lumpia 20 wrappers. Using a butter knife, spread filling onto one edge of the
lumpia. There should not be much more than one pinky-size of the filling.
Break one egg into a dish to use for sealing the lumpia.
Slowly roll the lumpia, starting from the edge with the filling and rolling straight, almost all the way to the other edge. Use some egg to seal the edge well and roll the lumpia right over the edge. Continue with other 0 lumpia until they're all done. Using kitchen shears, cut rolls in half.
Fry lumpia until they're a light golden brown. Use napkins to absorb
excess oil when done. Serve warm with your favorite spicy dipping sauce.
Makes 100 bite-sized lumpia.
