Instructions:
First, take a large Pyrex bowl (preferably 4-6 cup size) and mix together the sugar, salt, Karo corn syrup, and water until it is fully blended. Then slide it into your microwave oven and cook it on High - uncovered - For Exactly 3 Minutes.
Now remove the bowl from the oven and stir the mixture Thoroughly. When you have it well-mixed, put it back in the microwave and cook it on High again ~ uncovered - 8 To 10 Minutes or until a teaspoonful dropped in very cold water forms a small hard ball (this is about 260 degrees on your candy thermometer, just in case you want to check it).
While the sugar is cooking in the microwave, beat the egg whites in a large, chilled, stainless steel bowl until they form stiff peaks. Then take the cooked sugar-base from the microwave and pour it In A Thin Stream over the egg whites while you beat them at the high-speed setting of your electric mixer.
After all the sugar is whipped in, pour in the vanilla and continue beating until the candy mix holds its shape and begins to lose its sheen (this should take you about 5 minutes).
Now you're going to have to work fast, but when you have the candy formed, Gently Fold in the pecans. Then turn out tablespoon-size servings on waxed paper and let them set up. That's all there is to it, y'all.
Incidentally, this recipe will make about 30 pieces of spoon-size divinity. And you talk about good!
