In a large bowl, combine apples, pineapple, celery and mayonnaise. Toss lightly to coat evenly. Place whipping cream in a small chilled bowl. Using chilled beaters, beat whipping cream at high speed on electric mixer just until stiff peaks form. Do not overheat. Blend in sugar and vanilla. Fold into apple mixture. Cover and refrigerate at least 2 hours. Garnish with walnuts. Makes 9 servings.
