Low Fat Vegetable Lasagna
Zutaten für 1  Menge anpassen
die Zutaten:
lasagna noodles
2 x ca. 30 gMozzarella
1 PackungFrozen chopped spinach; (10oz.) thawed & well drained
1/2 Tassecarrot shredded
1 kleinZucchini shredded; about 1/2 cup
Non fat cottage cheese
egg
1 kleinonion
1 Esslöffeloil
1 Esslöffelflour
1/8 Teelöffelnutmeg
1/2 Tassechicken broth
1/4 Tasseparmesan grated
1/2 Teelöffelsalt
1/8 Teelöffelwhite pepper
die Zubereitung:

Cook lasagna according to pkg. Directions, drain and lay out on waxed pap= er

or counter top to cool. Combine 1 & 1/2 cup of cottage cheese, vegetables= ,

mozzarella cheese, salt and egg. Cut the lasagna to fit a 8X8 dish. Sprea= d

with 1/2 the cheese mixture. Cover with the small ends of the lasagna. Spread with remaining cheese mixture and remaining lasagna. In skillet, saute onion in oil until tender. Stir in flour, nutmeg &pepper. Stir in chicken broth & remaining cottage cheese and cook, stirring constantly, f= or

about 2 minutes. Add more chicken broth if the mixture becomes to thick, = it

should be about the consistency of a med. White sauce. Spread over lasagn= a

and sprinkle with Parmesan cheese. Cover with aluminium foil and bake at 350 degrees for 45 minutes. Uncover and bake until lightly brown at 400 degrees. Cool for about 10 minutes before serving.
