In a small mixing bowl, combine sugar, cornstarch and cinnamon, stirring until cornstarch is fully distributed. Arrange apples in casserole dish, and cover with sugar mixture. Cover and microwave on high for 5 minutes or until sugar is melted. Stir and cook, uncovered, another 4 minutes or until apples are fork tender. Makes 8 servings.
