In a saucepan combine cornstarch & sugar. Add water. Simmer mixture until it is clear & thickened. Remove pan from heat & add lemon juice, butter & lemon rind. (Lime juice & lime rind may be substituted for lemon.) Serve hot with gingerbread, rice pudding, bread pudding, etc. Makes 1-1/2 cups.
