These muffins, flavored with bacon and Swisscheese are just grand, served warm with sweet, creamy butter. They are nice with soup, salad or a hearty stew.
Beat together first 6 ingredients until blended. Stir together the remainig ingredients and add all at once. Beat until dry ingredients are just moistened. Do not overbeat.
Divide batter between 12 paper-lined muffin cups and bake in a 400 oven for about 25 mins, or until a cake tester, inserted in center, comes out clean. Serve warm with sweet whipped butter.
