Garlic-Basil Butter: Blend all ingredients; mixing well. Form into roll about 1/2 inches in diameter. Wrap in waxed paper and refrigerate, if preparing ahead.
Mix together ground lamb, salt and pepper; form into 4 or 5 patties. In skillet over medium heat, heat oil and cook patties until browned on both sides but still pink inside, 8 to 10 minutes on each side. Serve each patty with slice of Garlic-Basil Butter.
