125 Milliliter | butter softened |
125 Milliliter | sugar |
50 Milliliter | Brown sugar, packed firm |
5 Milliliter | cinnamon ground |
1 Milliliter | nutmeg ground |
1 gross | egg |
5 Milliliter | vanilla extract |
250 Milliliter | Plus 2 Tb flour |
1 Milliliter | Baking soda |
250 Milliliter | Dried apple, diced |
Preheat the oven to 190*C. In a large bowl, using an electric mixer, beat butter, both sugars, cinnamon and nutmeg until well mixed. Beat in egg, vanilla, flour and baking soda until the mixture is thoroughly combined and a stiff dough forms. Using a wooden spoon stir the dried apples into the dough. Drop the dough by rounded teaspoons, about 5cm apart, onto an ungreased baking sheet. Bake until the edges are golden brown, 8 to 10 minutes. Cool the cookies for 1 minute then transfer to a wire rack to cool completely. Repeat to bake the remaining dough.
