Bring water, butter and salt to a boil in a saucepan. Add rice and simmer uncovered until water is absorbed. Heat half and half and milk. Stir into rice and simmer until creamy. Add coconut vcrem, and simmer one minute, In a bowl, combine pineapple, egg yolk, and sugar. Pour part of the hot rice into the pine apple mixture and mix well. RReturn rice to pan, mixing well. Cool. Refrigerate until ready to serve.
