Preheat oven to 425~. Grate potatoes and pnoin (or use medium blade of food processor). Combine mixture with remaining ingredients, except oil, into a bowl. Brush 2 cookie sheets with oil, 1/2 tsp on each. Gently press excess liquid from latke mixture. Divide onto cookie sheets evenly to form 12 4-inch "pancakes". Bake 30 minutes.
