This variation, best with a graham cracker crust, if flavored with sugar-laced sour cream and lemon zest. Add 1 tbs grated lemon zest to batter. Bake as directed. Remove from oven and water bath. In bowl combine 1 cup sour cream, 2 tbs sugar and 1 tsp lemon zest. Spread mixture over top of cheesecake. Return to oeven until topping is set, 6-8 minutes. Garnish with lemon zest curls.
