Beat eggs, adding sugar while beating until smooth and creamy. Stir in oil until smooth, add honey and brandy and beat with spoon until well blended. Sift dry ingredients together and add raisins and nuts. Combine with creamy mixture, adding a little coffee while stirring to a smooth batter. Turn into a wax paper lined baking pan 8x11x2" and bake at 350F for 1 hour. If browned at edges and light brown on top, the honey cake is done. Test by inserting a toothpick in center. If toothpick comes out dry, remove cake from oven to cool. Cut into slices 1 1/2" wide, then diagonally to make diamond shapes.
