1/2 tsp baking powder
1/4 tsp salt
1 large tart apple - peeled and grated (about 1 cup)
1 Tbs lemon juice
1 Tbs sugar - mixed with 1 tsp. Cinnamon
1/4 c chopped walnuts (optional)
Preheat oven to 375 degrees. Place butter in a large, heavy cast-iron skillet and place in hot oven until butter melts and gets foamy. Meanwhile, in blender combine eggs and milk; mix well. Add flour, sugar, baking powder, and salt, blend about 15 seconds. Add apple and lemon juice and mix briefly. When butter is ready, pour batter into hot pan. Mix cinnamon-sugar with walnuts and sprinkle over top of pancake. Bake for 15 to
18 minutes, until puffy and golden brown. Cut into wedges and serve immediately. Makes 6 servings. Great with sausage or bacon!
