Combine egg, milk and shortening. Add to sifted dry ingredients and blend until smooth. Peel and cut bananas into 1/2 inch pieces. Roll in flour and dip into batter (above), coating banana pieces. Drop from spoon into deep fat at 375 degrees and fry 4 to 6 minutes until evenly browned. Drain and sprinkle with confectioners sugar. Yield: 8 servings.
