Preheat oven to 350 degrees. Mix sugar and oil thoroughly. Add eggs, one at a time and beat well. Add carrots. Add dry ingredients to mixture and beat 3 minutes. Stir in raisins. Bake in three greased 8 or 9 inch layer pans for 35 minutes in 350 degree oven.
For The Icing: 1 8-oz package cream cheese 1/2 stick butter or margarine 2 teaspoons vanilla 1 box confectioners' sugar Combine cream cheese, butter, vanilla and confectioners' sugar. Mix well and spread on cake.
