Combine all crepe ingredients in medium size bowl. Beat with rotary beater until thoroughly combined (two minutes). Heat non-stick skillet on high (skillet should be coated with non-stick vegetable spray). Test heat with drop of water (sizzles when ready). Remove from heat, pour approximately two Tablespoons of crepe mixture into Pan while tilting skillet allowing batter to spread evenly (consistency of crepe will be very thin). Return to heat and flip, browning other side (a few seconds). Spoon approximately 1 Tablespoon of filling into one crepe. fold one side over and roll. Top with your favorite fruit topping, syrup, or fat-free whipped topping. Serves 10.
