Mix oil and sugar; add eggs and beat. Add apples and mix well. Sift flour with soda, cinnamon and salt. Add to the apple mixture. Then add vanilla, pecans and coconut. Pour batter into a loaf pan; bake at 300 degrees for 1 hour and 20 minutes. This is a nice Christmas cake - takes the place of fruit cake - not as rich.

Variations; Add 1 cup chopped dates. A tube pan may be used.
