1 Tasse | rice uncooked |
1/2 x ca. 450 g | Ground pork |
1/2 x ca. 450 g | turkey ground |
3 Esslöffel | bread crumbs dried |
5 Teelöffel | curry powder divided |
2 mittel | Carrots -- halved & sliced |
1 klein | Zucchini -- halved & sliced |
2 mittel | cloves garlic minced |
2 mittel | Scallions -- cut in 1" Pieces |
Cook rice in boiling salted water, according to package directions until tender. Meanwhile, in a large bowl, combine ground pork and turkey, bread crumbs, 1 tsp curry powder and salt. In a large nonstick skillet, over medium-high heat, heat 1 Tbs oil. Add meatballs and brown well. Add carrots, cover and cook 5 minutes. Stir in zucchini, garlic and scallions and cook until tender, about 10 minutes. Push vegetables and meatballs to one side of pan. Add remaining 1 Tbs oil to pan and sitr in remaining 4 tsp curry powder. Add rice and cook, stirring until heated through, about 5 minutes.
