Now this is one I can use for my mystery dinner! It's also from "A Pinch of Salt Lake"
Whip cream but do not allow to get too stiff. Peel bananas and cut into 2-inch slices. Dip into cream, cover all surfaces and roll in coconut. Freeze on a waxed paper-lined cookie sheet; cover with waxed paper. Before using allow to thaw for 15-20 minutes. Great on a fruit tray.
