Cut hens in half & place in large heavy pan. Cover with boiling water & simmer 10-12 minutes. Lift out hens & arrange them in large casserole dish. Skim off fat from stock. Pour 1/2 cup stock into blender; add orange juice & rind, wine, spices, sugar & flour. Blend until smooth. Sprinkle fruit around hens & pour sauce over them. Bake in 400 oven for 20 minutes.
