Heat oven to 425F. Heat shortening and butter in baking pan, 13x9x2 inches, in oven until melted. Mix flour, salt, 1/2 teaspoon ginger and the pepper. Coat chicken pieces thoroughly with flour mixture. Place chicken skin sides down in pan. Bake uncovered for 30 minutes. Turn chicken; bake 15 minutes. Remove chicken. Drain fat; line pan with aluminum foil. Return chicken to pan. Mix honey, chili sauce and 1/2 teaspoon ginger; pour on chicken. Bake 15 minutes, spooning honey mixture onto chicken every five minutes. Serve immediately or refrigerate and serve chilled. 6 servings.
The first time I tryed this I used worcestershire sauce instead of soy sauce and it worked great.
