This delicious French dish can make a nice finish to a romantic evening (or any meal for that matter).
Peel pears and remove core.
In heavy saucepan, combine 1 cup wine and 3/4 cup sugar. Bring to a boil and continue cooking for 5 minutes. Add lemon juice and pears. Cook for 10 minutes. Chill pears in cooking liquid.
Meanwhile, in a small saucepan, heat remaining wine. Bring to a boil and cook for 20 minutes, or until wine is reduced to about 1/2 cup.
In the top of a double boiler, combine yolks and remaining sugar. Beat until creamy. Add reduced wine from pan. Cook, beating constantly, for 10 minutes or until smooth and beginning to thicken.
In a serving bowl, place a layer of ice cream. Drain pears and arrange them on top of the ice cream. Serve with wine sauce drizzled atop and on the side.
