In a large saucepan, combine all ingredients, except parsley: bring mixture to a boil, stirring once or twice. Lower heat, cover tightly and simmer for 15 minutes or until liquid is absorbed. ( Cook brown rice for about 45 minutes: parboiled rice for about 20 minutes.) Stir in parsley and serve.
