Mango Salsa #7
Zutaten für 4 Portionen Menge anpassen
die Zutaten:
Ripe mango; peeled, seeded and diced
1/4 Tassescallion chopped
1/4 Tassered bell pepper diced
1/4 TasseChopped fresh basil (or cilantro)
1/2 Lime; juice of

I recently came across this recipe in the Philadelphia Inquirer Recipe Box and tried it. It's superb and a delightful accompaniment to mixed salad greens for a lite, refreshing summer meal.

Combine mango, scallion, red bell pepper, basil, and lime juice. Stir to blend. Delicious served over a mixture of fresh salad greens. Garnish salad with sliced cucumber and wedges of tomato(or chop cucumber and tomato and combine with the salsa).

Makes about 4 servings. Nutritional data per serving: calories, 44; protein, .79g; carbohydrates, 11g; fat, .25g; cholesterol, none; sodium, 5mg.
