We're offering a sampling of Passover Preparations for the next week before we move onto a few Pasta Greats through the end of this month. You don't have to be Jewish to appreciate the Matzo as much ingenuity has been applied to many of the recipes we'll offer during our Passover Preparations, as leavened products are strictly forbidden.
Simply defined, leavened items are foods that count on yeast as an active agent to help the dough or batter to rise. Breakfast, lunch or dinner, leavened products are not allowed during Passover. Try this pancake-like recipe for breakfast today or during Passover the 10th through the 18th, and you'll have a new opinion of Matzo when your plate is cleared.
Break matzos in a large bowl, pour hot water over to cover. After about 5-minutes, pour the remaining water off and squeeze surplus water out. Add an egg and mix well. Melt a little butter or margarine in a frying pan, add the mixture all at once to the pan and flatten out into a large cake. Flip the cake when it starts getting brown underneath and continue to fry for about 3 to 5-minutes per side. Cover to cook through until well done but still soft, after the matzo brie flip. Serve immediately, with brown sugar and cinnamon sprinkled toppings.
