Preheat oven to 350°F. Combine coconut and breadcrumbs in a shallow dish. Season with salt and pepper to taste. Pour melted butter into a baking pan. Dip chicken in egg, one piece at a time, then roll in coconut mixture. Arrange chicken skin side down in pan. Bake 25 minutes. Turn chicken, and bake another 25 minutes, until cooked through and golden.
