Soak beans overnight in water to cover. Pour beans & water into a pot & add ham bone. Add water to cover. Cook slowly 3 hours. Add all other ingredients to beans except sausage. Cook uncovered 1 hour. Cool overnight, if possible. When ready to serve, warm with sausage & serve over rice.
