Dissolve gelatin in hot orange juice. Chill until syrupy. Chill 1 cup undiluted Carnation evaporated milk in metal ice cube tray or similar container until soft ice crystals form around tray. Whip until stiff; add lemon juice. Whip very stiff. Add chopped celery and cottage cheese to gelatin. Fold in whipped Carnation. Spoon into ring mold. Chill 2 hours. Unmold and fill center with fruit.
