Preheat the oven to 180øc.
1. Put the oats, coconut, flour and sugar in a big mixing bowl.
2. Melt the golden syrup and butter together in a saucepan until hot.
3. Put the bicarbonate of soda and boiling water in a small bowl and mix then add to the butter/syrup mixture in the saucepan. Allow The Mixture To Foam.
4. Pour the melted mixture on top of the dry ingredients and mix very well.
5. Drop teaspoonsful of the mixture onto greased, non-stick oven trays, leaving room for the cookies to spread.
6. Bake for 20 minutes then take the tray out of the oven and leave the biscuits on the tray for 2 minutes then remove and cool on a wire rack.
