Heat oil in skillet and brown onion, garlic, mashed banana and curry powder. Add broth. Pre-cook rice, then add to skillet. Cut bell pepper in 1x1 inch Pieces. Put alternating bell pepper pieces and mushrooms on skewer (Roughly 10 mushrooms and 10 bell pepper pieces per skewer). Transfer skewers to clean skillet and brown for approx. 4 minutes. Serve over rice.
