1 Pour the cream into a large bowl and add the caster sugar. Whip until it just begins to hold its shape and then fold in the creme fraiche and coffee.
2 Roughly crush the amaretti biscuits and use half to fill the bottom of two stemmed elegant glasses. Pare over a third of the chocolate.
3 Cover with half of the cream mixture and repeat the layers, finishing with a paring of chocolate. Set on a serving plate and serve at once.
