Cream the butter and sugar until light and fluffy. Beat the egg and water together and mix into the creamed butter and sugar. Stir in the carrots and apple. Sift the flour, bicarbonate of soda, baking powder, salt and nutmeg. Stir to blend.
Spoon the mixture into a prepared bun tray. Bake at 180 °C/350°F/gas mark 4 until the tops spring back when lightly touched. Allow to stand for 10 minutes before transferring to wire rack.
