Halve and pit nectarines; place, cut side up, in 9 inch pie plate. Crush cookies, leaving some larger pieces; mound in nectarine hollows.
Combine honey, water and lemon juice. Pour half into pie plate; spoon remainder over crumbs. Bake in 375°F oven, basting twice, for 15 to 20 minutes or until tender.
