Pre-heat the oven to 400F. Scrub the potatoes carefully with a natural bristle brush brush but do not peel. Pierce the skins two or three times with a fork and bake for 1-1 1/2 hours or until soft.
While the potatoes are cooking, mix together the other ingredients.
When cooked, slit the potatoes open and fill.
