In a 10-inch non-stick skillet heat 2 tablespoons oil. Add enough cooked pasta to make a thin cake in the skillet. Cook until crusty and golden brown on the bottom, pressing lightly, 20 to 25 minutes. Flip and brown on the other side 10 minutes more. Top with caponata, grated mozzarella and sliced sausage. Cover and heat through another 3 minutes or until cheese is melted.
