Combine all ingredients in blender and blend until smooth. Let batter "rest" for 15 minutes. Ladle onto preheated waffle iron. (Use about 1 cup of batter for a 4 section waffle.) Serve under some of the following toppings: fruit puree, bean soups, gravy, vegetable sauce, or a little maple syrup.
Helpful hints: To keep warm before serving, place cooked waffles in a warm oven on the bare oven rack. Lightly oil (even non-stick) waffle iron before heating, to prevent sticking. These are very hearty, filling waffles.
