Oriental Noodle Salad
Zutaten für 6 Portionen Menge anpassen
die Zutaten:
Salad
4 x ca. 30 gChuka soba noodles
1 EsslöffelSesame Oil oriental
2 Esslöffelsesame seeds
2 Tassebean sprouts fresh
1/4 x ca. 450 gSmall cooked shrimp; peeled
green onions thinly sliced
Stalk celery; thinly sliced on the diagonal
1/4 x ca. 450 gmushrooms thinly sliced
Soy Dressing
1/3 TasseRice Wine Vinegar
2 Esslöffelsugar
2 Esslöffelsoy sauce
1/4 Teelöffelginger ground
1/4 Teelöffelmustard dry
1 Prisecayenne pepper
1/4 Tassesalad oil
die Zubereitung:

To prepare salad, add noodles to a large kettle of boiling salted water. When water returns to a boil and noodles come to top, cook until just tender (2 to 3 minutes). (If another type of pasta is used, follow package directions.) Drain, rinse with cold water, and drain again. In a large bowl mix noodles with sesame oil; set aside. Stir sesame seeds in a small frying pan over medium heat until lightly browned (6 to 8 minutes); cool. Add bean sprouts to a large kettle of boiling water; when it returns to a boil, remove from heat, drain, rinse with cold water, and drain again; add to noodles. Cover and refrigerate for at least 1 hour. To prepare Soy Dressing, mix vinegar, sugar, soy sauce, ginger, mustard, and cayenne in a small bowl. Using a whisk gradually mix in oil until blended.

onion, celery, mushrooms, and Soy Dressing. Salad Yield: 4 to 6 servings. Dressing Yield: 3/4 cup.
