Boil or steam potatoes in their jackets. Chill. Peel. Shred. Toss with onion, oil, salt, and pepper. Pat into thin patties. Brown in a teflon skillet over medium heat 10-12 minutes. Turn. Brown 8-10 minutes longer or to desired brownness. For extra crispness, using two spatulas, cut horizontally through center of patty; flip one half over the other. Busted by sooz
